About the Recipe

These Almond Flour Blueberry Muffins are a wholesome dessert option designed to satisfy cravings without refined sugar. They’re perfect for breakfast, snacks, or a balanced sweet treat.

Ingredients

  • 2 cups almond flour

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • 2 eggs

  • ¼ cup unsweetened almond milk

  • ¼ cup monk fruit or erythritol sweetener

  • 1 tsp vanilla extract

  • ½ cup blueberries

Preparation

Step 1: Preheat oven to 350°F (175°C) and line a muffin tin.


Step 2: Mix almond flour, baking powder, and cinnamon in a bowl.


Step 3: Whisk eggs, almond milk, sweetener, and vanilla separately.


Step 4: Combine wet and dry ingredients, then fold in blueberries.


Step 5: Bake for 18–22 minutes until set.
