About the Recipe
When you want a comforting meal without a lot of leftovers, this small-batch turkey loaf delivers classic flavor in a lighter, everyday way.

Ingredients
½ lb ground turkey (93% lean works best)
¼ cup plain breadcrumbs or panko
1 egg
2 tbsp milk (or unsweetened almond milk)
2 tbsp finely chopped onion
1 small clove garlic, minced
1 tbsp ketchup (plus extra for topping)
1 tsp Worcestershire sauce
½ tsp dried thyme
½ tsp dried parsley
¼ tsp paprika
Salt & black pepper, to taste
Olive oil or cooking spray
Preparation
Preheat oven to 375°F (190°C). Lightly grease a small loaf pan or baking dish.
In a bowl, mix breadcrumbs and milk and let it soak for 1–2 minutes until soft.
Add the ground turkey, egg, onion, garlic, ketchup, Worcestershire sauce, herbs, paprika, salt, and pepper.
Mix gently until just combined. Do not overmix.
Shape into a small loaf and place in the pan or dish.
Spread a thin layer of ketchup over the top.
Bake for 35–40 minutes, until cooked through (internal temp 165°F).
Let rest for 5 minutes before slicing.
