About the Recipe

This Creamy Vegan Chickpea Coconut Curry is a comforting, protein-packed dish that’s easy to make and full of bold flavor. It’s a go-to plant-based meal that satisfies without feeling heavy.

Ingredients


  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tsp fresh ginger, grated

  • 1½ tbsp curry powder

  • ½ tsp cumin

  • ½ tsp paprika

  • 2 cans chickpeas, drained and rinsed

  • 1 can full-fat coconut milk

  • 1 can diced tomatoes

  • Salt and pepper to taste

Preparation

Step 1 

Heat olive oil in a large skillet over medium heat. Add onion and sauté until soft.


Step 2 

Add garlic, ginger, curry powder, cumin, and paprika. Stir until fragrant.


Step 3 

Add chickpeas, coconut milk, and diced tomatoes. Stir well.


Step 4 

Simmer uncovered for 15–20 minutes, stirring occasionally.


Step 5

Season with salt and pepper and serve warm.
