Ingredients
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 tsp fresh ginger, grated
1½ tbsp curry powder
½ tsp cumin
½ tsp paprika
2 cans chickpeas, drained and rinsed
1 can full-fat coconut milk
1 can diced tomatoes
Salt and pepper to taste
Preparation
Step 1
Heat olive oil in a large skillet over medium heat. Add onion and sauté until soft.
Step 2
Add garlic, ginger, curry powder, cumin, and paprika. Stir until fragrant.
Step 3
Add chickpeas, coconut milk, and diced tomatoes. Stir well.
