Ingredients

  • 1 ¾ cups flour

  • 1 cup cane sugar

  • 2 tsp baking powder

  • ½ tsp salt

  • ¾ cup oat milk

  • ¼ cup melted vegan butter

  • ¼ cup applesauce

  • 2 tsp vanilla

  • 1 cup fresh cranberries coated in 1 tbsp sugar

Preparation

Step 1


Preheat your oven to 350°F (175°C) and lightly grease your cake pan. In a mixing bowl, whisk together the flour, cane sugar, baking powder, and salt until fully combined.



Step 2


Add the oat milk, melted vegan butter, applesauce, and vanilla extract to the dry ingredients. Stir gently until a smooth batter forms—avoid overmixing.


Step 3


In a small bowl, toss the fresh cranberries with 1 tablespoon of sugar to lightly sweeten them. Fold the cranberries into the cake batter using a spatula.



Step 4


Pour the batter into the prepared cake pan and spread evenly. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool fully, then dust with powdered sugar for a snowy festive look.
