Preparation

Directions:

  1. Preheat the oven: Set your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish with non-stick cooking spray.

  2. Layer the fruit: Arrange the drained peach slices evenly along the bottom of the prepared baking dish. Sprinkle the 1 teaspoon of cinnamon evenly over the top of the peaches.

  3. Add the cake mix: Pour the dry sugar-free cake mix directly over the peaches, using a fork or spatula to spread it into an even layer covering the fruit entirely. Do not stir the layers together.

  4. Add the crunch: Scatter the chopped pecans evenly across the top of the dry cake mix layer.

  5. Pour the liquids: In a small bowl, whisk together the melted butter and the 1/4 cup of almond milk (or reserved juice). Drizzle this mixture slowly and as evenly as possible over the entire top of the cake, trying to wet as much of the dry cake mix as you can.

  6. Bake: Place in the oven and bake for 45 to 50 minutes until the top is beautifully golden brown, the pecans are toasted, and the peach juices are bubbling up around the edges.

  7. Rest and serve: Allow the dump cake to rest and set for 10 to 15 minutes before serving. It pairs wonderfully warm with a dollop of sugar-free whipped topping or a scoop of no-sugar-added vanilla ice cream.
