Herb-Roasted Chicken Thighs with Green Beans is a comforting, diabetic-friendly meal that delivers rich flavor without added sugars or refined carbs. It’s a dependable, nourishing dinner perfect for weeknights or meal prep.

Ingredients

  • 6 bone-in, skin-on or skinless chicken thighs

  • 2 cups fresh green beans, trimmed

  • 2 tbsp olive oil

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • ½ tsp garlic powder

  • ½ tsp paprika

  • Salt and pepper to taste

  • Optional: lemon wedges for serving

Preparation

Step 1: Preheat oven to 400°F (205°C). Line a baking dish or sheet pan.


Step 2: Pat chicken thighs dry and place them in the baking dish. Add green beans around the chicken.


Step 3: Drizzle olive oil over chicken and green beans. Sprinkle with thyme, rosemary, garlic powder, paprika, salt, and pepper.


Step 4: Roast uncovered for 35–40 minutes, until chicken is cooked through and skin is lightly crispy.


Step 5: Remove from oven and rest for 5 minutes. Serve with lemon wedges if desired.
