Ingredients
1–1½ lbs salmon fillet (skin on or off)
2 tbsp olive oil
2 cloves garlic, minced
Zest of 1 lemon
2 tbsp fresh lemon juice
1 tsp dried oregano (or thyme)
1 tsp dried parsley (or fresh, chopped)
½ tsp salt
¼ tsp black pepper
Lemon slices, for topping (optional)
Preparation
Step 1: Prep the Oven
Preheat oven to 400°F (205°C).
Line a baking sheet with parchment paper or lightly oil it.
Step 2: Season the Salmon
Place salmon on the baking sheet.
In a small bowl, mix olive oil, garlic, lemon zest, lemon juice, herbs, salt, and pepper.
Brush mixture evenly over the salmon.
Top with lemon slices if desired.
