About the Recipe

This single-serve chili is cozy, flavorful, and incredibly easy to make with pantry staples. It’s the perfect affordable one-pot meal when you want something warm and satisfying without a lot of prep or cleanup. Customize it with your favorite toppings and enjoy a fast, comforting dinner for one.

Ingredients

  • ½ tbsp olive oil

  • ¼ cup chopped onion (fresh or frozen)

  • ¼ cup chopped bell pepper (fresh or frozen)

  • 1 small garlic clove, minced (or ¼ tsp garlic powder)

  • ¼ lb (4 ozground turkey or beef

  • ½ cup canned diced tomatoes

  • ½ cup canned beans (kidney, black, or pinto), drained

  • ¼ cup water or broth

  • ½ tsp chili powder

  • ¼ tsp onion powder

  • ¼ tsp paprika

  • Salt & pepper to taste


Optional toppings:

  • Shredded cheese

  • Sour cream

  • Green onions

  • Crushed tortilla chips

Preparation

Step 1

Heat ½ tbsp olive oil in a small pot or skillet over medium heat. Add the chopped onion and bell pepper; cook for 2–3 minutes until softened. Add minced garlic and cook for 30 seconds (skip this step if using garlic powder).


Step 2

Add the ground turkey or beef.Break it apart with a spoon and cook until fully browned.


Step 3

Stir in the beans, diced tomatoes, and spices:

  • ½ tsp chili powder

  • ¼ tsp onion powder

  • ¼ tsp paprika

  • salt & pepper to taste

Pour in ¼ cup water or broth to loosen the mixture and stir well.


Step 4

Simmer for 10–15 minutes until thickened and flavorful. Taste and adjust seasoning as needed. Serve hot with optional toppings like cheese, sour cream, green onions, or crushed tortilla chips.
